After weeks of quarantine baking, I figured a vegetable of some kind would be a good decision. But also, I didn’t want to go so far as to eat a salad, that would only add to my stress level. I needed comfort food but in the shade of green. I’d never made an Alison Roman recipe before (I know, I know, “the cookies” are coming). This gratin looked like a good veggie option while still requiring heavy cream, cheese and bread. What more could you ask for?

The recipe is super easy. It’s basically just tossing the vegetables together, roasting, then adding the good stuff for the final oven time. It really could not be simpler, and if you’ve been following along, you know this is what I needed after the infamous quiche. Thank you, Alison.

Overall, these brussels were great. I’d say on the heaviness scale from celery to scalloped potatoes, these were like a 5. There isn’t enough cream and cheese in them to make you feel too guilty but also you could make this for a weekend dinner side and not feel sad hungry.

Would make again: Yes – Highly recommend when you’re hungover, need to make you first healthy decision of the weekend but also still need cheese.
