We’re interrupting our normally scheduled recipe reviews for a product review, and that product is Daiya’s vegan mac & cheese. I’m not sure what possessed me to try this as I’m not vegan and do love real cheese but here we are.
Daiya makes a variety of plant-based products including pizza, burritos, desserts, sauces, you name it. I may venture further into this vegan world someday, but for now I’m happy with the “cheezy mac”. In terms of prep, it’s similar to a Kraft Easy Mac, in that you cook the pasta and then add the sauce packet. The sauce is strange looking at first but once it’s heated up on the hot pasta, it takes on a more appetizing texture. This variety comes with some little pieces of carrots, peppers and peas that give it a little something extra. Personally, I always add broccoli or asparagus (about halfway through cooking) to make it feel a little more adult.
Don’t ask me how, but it tastes like real mac & cheese and is delicious. The box gives me two hearty meals at 440 calories each so I consider that pretty healthy for “cheesy” pasta in a box. Kraft is about 25% more calories. Overall, for a quick meal, I am into it. Definitely recommend adding a veggie of your choosing, otherwise the risk of eating the whole box in one sitting is high.
