The delightfully simple recipe comes to us from the @traderjoeslist Instagram. If you’re a TJ’s fan, highly recommend giving her a follow. I watch all of her grocery haul unbaggings. They’re a refreshing change of pace from the lifestyle bloggers in matching sports bra/legging sets unboxing a package full of more matching sports bra/legging sets. Not that I don’t watch those too, it’s called balance.
This recipe purely consists of stirring frozen berries in with any kind of milk. I went through a couple iterations of this and think I’ve found the best combo. I first tried freezing fresh blueberries but they didn’t color the milk enough and the result didn’t look super appetizing. What was more successful was using store-bought, frozen mixed berries with almond milk. The juice leaks out of the berries more and gives the “ice cream” the nice blue color you want. Almond milk provides a nice consistency (I didn’t experiment with any other dairy or nondairy milks).
This healthy ice cream is pretty tasty. Yes, your taste buds can tell you’re not eating Häagen-Dazs but it’s still satisfying. I topped mine with almond butter, a drizzle of honey and a few chocolate chips for good measure. This has definitely earned a place in my summer snack rotation. Pairs well with sun.
