There are two camps of people when it comes to sour cream, those who appreciate the creamy tang it adds to spicy foods and those who think it’s disgusting. You’ve already seen the pic so you know which camp I’m in. Sour cream in breakfast tacos was new to me and we all know how much I love an Instagram live cookalong so this was mandatory participation on my end.
The taco is assembled on a flour tortilla with a smear of sour cream, quick scrambled eggs and an herby salsa verde. (If you hate sour cream, you’re given an out and allowed to use avocado instead.) When it comes to breakfast tacos, normally I throw some eggs and hot sauce on a tortilla and call it a day but it was nice to have some structure here.
The herby salsa verde is key. Without it, you’re making your same old breakfast tacos. As I bit into these, I realized these are the more creative breakfast tacos I needed. My motivation to cook breakfast and not eat a protein bar that tastes like bird seed was renewed. They were delicious and not too hard to for a weekday.
