NYT COOKING SPICY ROASTED CHICKEN THIGHS

Nothing screams Tuesday like sheet pan chicken. Maybe cereal, but I decided it was cool enough to turn the oven on. You can tell my motivation was unusually high since there is no foil on in the pictures. It took me the better part of the night to finish scrubbing the pan (I only wash dishes during commercials), which I told myself will earn me at least 6 new followers.

Regardless, this recipe is a keeper for weeknight chicken. You throw some spices, a jalapeño and tomato paste in a food processor and you’ve got your rub. The ginger and lemon give this a unique, bright flavor while keeping it spicy. It was the right amount of different without too much fuss for a weeknight. Add a veggie and carb and you’ve got a meal. I also served it with that refrigerated cilantro salad dressing from Trader Joe’s, which might be weird but was a nice cooling contrast.
