Summer is now well underway, I’m still sober (aka pregnant) and my popsicle search continues. All I want are semi-healthy, delicious popsicles that will bring me joy while cooling me down in these rosé-less months. I decided to make up my own recipe this time, partially because the last few recipes were disappointing and partially because I overbought peaches. So here’s what I made:
Blend together 2 cups peaches, 1 cup of Greek yogurt, 1/2 cup mascarpone, 2 tbsp honey. Fill popsicle molds 3/4 of the way full. Slide 2 thin peach slices into each one. Top off any that aren’t full. Freeze and enjoy.
These popsicles were the best I’ve made thus far, although I still have room to improve. They were sweet enough and very creamy thanks to the mascarpone, with a tang from the fresh peaches. The Greek yogurt is the healthy filler you need, that doesn’t detract from flavor. If you want them more photogenic, remove the skins of the peaches that go in the blender. I kept mine on (for health?). Pairs well with hot summer days and listening to your neighbor’s illegal fireworks.
